St Georges
St. Georges Mushroom are so called because they usually appear around the 23rd April which is St. Georges Day. Their season is quite short as they are normally not available after the middle of May. They are White to cream in colour; the flesh is white and soft with a mealy smell, which is pleasant and strong.
The caps need to be brushed because they can be gritty. This mushroom goes particularly well with chicken and fish and gives an ordinary casserole extra zest and taste. They are prone to suffer from worm infestation, which can detract from their benefits. They have a shelf life of 5-6 days at 5-6 Degrees.
