Autumn Chantarelle
This mushroom is only found growing in the wild. The season starts with Scottish product usually from mid September and then moves onto product from the South West of France. The season usually lasts until the end of February to early March.
Autumn Chanterelles come in two forms, Yellow and Grey. They are very similar in most respects, but the grey tends to have a slightly longer shelf life and a firmer stem.
The caps will measure from 10mm to 45mm in diameter with the stems being up to 100mm in length. They have a very sweet flavour that goes particularly well with fish. They have a shelf life of 7-10 days if kept at 5-6 Degrees.
