Also Known As: Buna Pi, these mushrooms are related to Buna-Shimeji. Shiro is the Japanese word for white, hence Shiroshimeji.
Appearance: When cultivated they grow in clusters of compact, white stems topped with creamy white caps.
Characteristics: Shiro Shimeji are firmer in texture and milder and sweeter in flavour than Buna-Shimeji.
Shelf Life: Shiro Shimeji has a shelf life of approximately 10 days when kept refrigerated.
Packed: Like Buna Shimeji, Shiro Shimeji grow in tight clusters and are picked and packed in their clusters.
How to Cook: These mushrooms are good in stir fries, with pasta, with game or seafood and in soups and stews. To prepare, simply cut off the base of the cluster so that mushrooms fall into separate pieces.
