Pied Bleu
Also Known As: Blue Foot and Field Blewit.
Appearance: It is the blue stem that gives this mushroom the name Pied Bleu, meaning Blue Foot. They can measure up to 100mm in diameter with stems as long as 80-90mm. The blue stem may appear to be a mould that may spread and develop aerial hyphae, this is not an indication of age or deterioration, but is characteristic of the species.
Characteristics: Pied Bleu have a strong fragrance and a distinctive flavour. They are found commonly growing in the wild in the UK on permanent pasture from October to December.
Shelf Life: They have a shelf life of 7-10 days if kept at 5-6 Degrees
