Eryngii

 

Also Known As: King Oyster because they are believed to have the best flavour of the oyster variety. They are also known as Emperor Mushrooms. 

Appearance: Eryngii have a stout form, short gills and thick flesh.

Characteristics: These mushrooms are very popular in Europe and Eryngii have a firm bite with a meaty texture.

Shelf Life: When refridgerated, Eryngii have a shelf life of approximately 10 days.

Packed: Eryngii are packed in punnets, usually two to a punnet

How to Cook: They should be sliced along the whole length of the stem and fried until the edges become crispy golden brown, they can also be used in many different dishes and especially with lamb, pork and fish. Eryngii are also a great alternative to meat and can be used in vegetarian dishes.
