Also Known As: Flammulina velutipes (Velvet Shank)
Appearance: Enoki are found growing naturally in the UK, however, their appearance in the wild is totally different to the pure white variety that are grown at Lowerfields Farm by Livesey Bros which have been given the name “Enoki”. Enoki mushrooms are long thin-stemmed with a small pinhead cap.
Characteristics: Enoki means winter mushroom, so called because they grow at temperatures as low as 1 or 2 Degrees. They have been grown in China and Japan for over 60 years. Enoki are the fourth most consumed mushroom in the world, (approximately 100,000 tonnes per year).
Shelf Life: They have a shelf life of 10-15 days, if kept in the sealed pack that they are sold in, and kept refrigerated.
Packed: Enoki grow in clusters and are picked and packed in their tight clusters.
How to Cook: They have an excellent flavour, which can enhance almost any dish. As with the Buna Shimeji, the whole mushroom must be eaten.
