Exotic Mushrooms
Exotic Mushrooms provide an alternative to the common Button Mushroom and more importantly to the decreasing populations of Wild Mushrooms. They are produced in
temperature controlled buildings using largely waste materials from the farming industry, namely straw. They are available throughout the year, normally at a fixed price making them easy to fit into any menu. They all have unique and interesting flavours and textures. Many Exotic Mushrooms were only available through imports from across the world making them expensive and generally of poor quality. However, now they are grown at Lowerfields Farm by Tim and Simon Livesey alias Livesey Brothers.
Livesey Brothers are constantly pushing to develop new species. Over the last 20 or so years they have seen Oyster mushrooms from introduction to the UK, through to it’s almost “commodity” status on store shelves
New product development is core to Livesey Brothers with >20% of the farm given to developing new types of Exotic mushrooms. Recent additions to the product range include Maitake Mushrooms noted for their reputation as Medicinal Mushrooms.
The farm has enabled the British public to appreciate the diversity of mushrooms without having to travel around the world – or more importantly in an era of “carbon-footprint” awareness – without the mushrooms having to be imported from around the world! "As we introduce another species to our range that we produce it's another one less that has to be imported," says Tim Livesey. - The taste of the Orient direct from Leicestershire!
