The Mushroom Basket - Recipes -Maitake Mushroom
Stir-Fried Chicken with Mixed Oyster Mushrooms and Prawns

Ingredients:
- 2 tblsp oil
- 3 sticks celery, finely chopped
- 1 large onion sliced lengthways
- 2 cloves garlic crushed
- 120g Grey Oyster Mushrooms
- 120g Yellow Oyster Mushrooms
- 275g free range chicken breast cut into strips
- 125g peeled prawns
- salt and pepper
- 2 tblsp lemon juice
- Thinly sliced lemon for garnish
Method
Heat oil in a wok or frying pan; stir in celery and onion. Cover and cook over a gentle heat fro 3 minutes. Slice the mushrooms and stir in with the garlic, Chicken, prawns, salt and pepper. Cover and continue cooking for 8-10 minutes, stirring occasionally. Stir in lemon juice. Serve garnished with thinly sliced lemons.
