Stuffed Shiitake with Cheese Garlic and Herbs

Ingredients:
- 12 Shiitake mushrooms
- 500g cream cheese, softened
- 1 clove garlic, crushed
- 2 tablespoons chopped parsley
- 2 tablespoons chives
- ½ cup breadcrumbs
- 2 tablespoons butter
Method:
Firstly cut or pull the stems out of the shiitake mushrooms, and scoop some of the inside out with a spoon. Then warm up the butter and gently fry each side of the mushroom caps for 2 mins, making sure they are coated in butter. After this season both sides with salt and pepper, sprinkle with the parsley and remove from the pan.
For the stuffing mix the crushed garlic and chives with the cream cheese and then stir in the breadcrumbs. Spoon this filling into the mushroom caps and grill for 3-5 mins.
Serve on thier own as a starter or with salad for a light meal. Also a great alternative to meat for vegetarians.
